Together with chef Andrea, in base of the level of course selected, you may prepare a full three to four courses in addition to homemade breads, or concentrate on fine tuning specific areas: from pasta and gnocchi skills, to fish, baking, sauces, meat or dessert.
All our lessons usually start with Bread, after a complete explanation of the different type of flours, how they work, why we might use a certain kind of flour instead of another; yeasts, sugars and temperatures. It’s time to learn how to knead, shape, rest and flavour your breads. Everything will be done to ensure you have the same incredible result time over time and gain the confidence to cook the way we do when you get home.
Next a short but important lesson in Knife skills, learn how to chop as a professional chef. We will show you easy techniques to make sure you work in safe and fast way. Start to feel confident using knifes and half the time it takes to prepare meals.
Now we are ready to start preparing our delicious Italian meal, all menus are selected in base of each groups needs and passions and are usually pre-agreed by the group. These are always seasonal, sometimes include foraged ingredients and consist of a starter, a first course, a main course and a dessert. We also offer vegetarian options and menus.
Chef Andrea will share secrets and tricks he learnt working in restaurant kitchens. Learn to make the perfect béchamel sauce or a velvet cheese fondue, fresh gnocchi and home made pasta. Perfect your tagliatelle, tortellini, lasagne or ravioli making skills. Improve your knowledge and understanding of meats, fish, vegetable and sauces. Learn to fillet, de-bone and plate it all up like a professional.
Please inform us of any dietary restrictions (or vegetarian preferences) ahead of time. We also offer specific pasta making, bread making, and family-oriented specialty classes upon request. Contact us for multi-day class options.
